Chinese History and Culture: History of China from Antiquity through Modern Age

Discover the origin of Chinese civilization with its archaeological records, geographic environment, the people, language, social heritage and writing system. Italian American Internment in World War II

The internment of Japanese Americans in World War II is as infamous as it was tragic. Some 600,000 Italian Americans were subjected to various restrictions including forced evacuation and relocation, and even internment. This class will present an overview of this nearly forgotten footnote in American history, concluding with its impact upon the Italian American social consciousness and its forgotten place in American history.

Foundations of Effective Thinking

Part 1: Home Winemaking Fundamentals

Do you have little or no experience in making wine and desire to make wine at home as a hobby? Let us show you how. The actual step-by-step process by which finished wine is made is covered, as are the scientific and technical aspects of winemaking in a manner that allows both the scientist and non-scientific student to follow without difficulty.

Part 2: Analysis of Wine and Must

Learn to unlock some of the mystery about what is contained in wine and gain a solid understanding of the various important tests and analyses used in wine production. Part 3: Winemaking Finishing Operations

After initial and secondary fermentations, winemakers are left with a number of choices about how to finish and prepare their new wine for bottling. Follow a typical red / white wine through the finishing steps such as malolactic fermentation, the aging process, types of oak for adding complexity, bottling, and much more. Winemaking Parts 1 and 2, or previous winemaking experience is suggested.

The Southern Italian Kitchen

Mangia! Come to our 'cucina', and learn to cook as they do in Southern Italy. From 'Primo' (first course) to 'Dolce' (dessert) you will be given hands-on experience in preparing the foods and discovering the culture of this sunny land. Each day's lesson will be based on one element of a complete meal, whether in a 'Trattoria' or simply with 'famiglia', and of course we will eat the fruits of our labors! We all recognize specific emotions, beauties, and curiosities about life, and as English Romantic poet John Keats noted, "Poetry should...appear [to the reader] almost a
remembrance." Discovering your inner poet will be an exercise in heightening your awareness of not only the big, obvious "topics" for poetry, but also the small things that, stringed together, make up so much of our lives.
